the key

Okay, sometimes it seems like we're taking on too much. Other times it feels freakin' exciting to be a part of this project! The conversation, though, must manifest itself in reality. As the cliche goes, talk is cheap. We've begun in earnest the search for a chef to help us realize our vision. Meetings will happen over the next few weeks. I hope we will soon find someone. The person we choose we must implicitly trust.

This blog will document our process opening Thirstbar. We hope to create a comfortable place for people who love to drink traditional and natural wines, and eat seasonal, deceptively simple food. Kermit Lynch remains the primary inspiration on the wine side; Alice Waters for the food.

There's a LOT of work ahead, but we're trying to embrace the steps, the process. One lives only once, right? And if we don't do this now, when?
